2 layer spinach cake

This recipe is from Oktay Usta. I made it for my friend's good bye party. it is very yummy and looks impressive :)






Ingredients:

4 eggs
1.5 cups sugar
2 tsp baking powder
2 tsp vanilla
500 gr spinach
2.5 cups flour

cream:
3 cups milk
4 tbsp flour
1 egg yolk
1 cup sugar
1 tsp vanilla

1.5 cups whipped cream

Preparation:

  1. Place spinach into boiling water and boil spinach until it starts to change its color (10-15 mins). After that remove it from water and place directly into cold water. Remove all the water and make a puree from the spinach.
  2. Turn the oven on to 170C. In the mixing bowl place eggs and sugar and whip until it bubbles. After that mix it with spinach. Add slowly flour, vanilla and baking powder.
  3. divide the dough into 2 parts(if you have 2 round dishes of different size make 1 bigger than the other). place one part into the baking dish and cook it(~40-50 mins). after its ready cook the other dough.
  4. While cakes are in the oven start making cream. Pour milk in the pot, mix it with flour, sugar, vanilla and egg yolk. cook it on medium heat until it starts bubbling. let it cool.
  5. When cakes and cream are ready divide one cake into 2 halves. Pour a bit more than a half of the cream onto bottom part of the cake. cover it with the top half. As I don't have smaller baking dish I cut smaller circle from this cake (~4 less in diameter) and did the same procedure as with the first cake(i.e. cut in half and place cream in between).
  6. Prepare whipped cream. Put bigger cake on your serving dish and cover it with whipped cream. After that place a thin wooden stick in the middle(so smaller cake would sty in place). Put the smaller cake on tor of it and also cover it with whipped cream.
  7. From the cut out part of the smaller cake make small crumbs and place the on the cake as seeing on the picture. You can decorate it with kiwi if you would like.
