chocolate sauce

First recipe:

Ingredients:
100 ml cream
100 gr chocolate chips

Preparation:
Mix cream and chips in a small pot. Stir constantly on medium heat until chips melt completely. Leave to cool and serve.

Second recipe:

Ingredients:
1.5 tbsp flour
3 tbsp cacao
0.5 cup sugar
0.5 cup milk
0.5 cup water

Preparation:
Mix all the ingredients in a small pot. Stir constantly on medium heat until it boils. Leave to cool and serve.

Chocolate cake with cream

I made this for my friend's birthday. Turned out to be pretty good. Try it!

Ingredients:

For cake:
4 eggs
1 cup sugar
2 tsp vanilla(optional)
3 tbsp cacao
1.5 cups flour

For cream:
1 cup whipped cream

For decorating:
1 cup whipped cream
0.5 cup chocolate sauce (see for recipe on blog or buy ready sauce)
50 gr chocolate chips
marshmallows(optional)
strawberries(or any other berries)


Preparation:
Preheat oven to 180C. In the bowl mix eggs and sugar until it becomes white. In the other bowl mix cacao, flour and baking powder. Add flour mix to the eggs while mixing. Pour the dough into the baking form and bake for ~25-30 minutes. While it is baking prepare whipped cream and leave it in refrigerator for at least 15 minutes. After cake is cooled cut it in 2 halves horizontally. Pour ~100 ml of milk on lower part to soften it and then spread 1 cup of whipped cream. Soften the upper part with milk too and cover the lower part. After that cover the whole cake with whipped cream. Pour chocolate sauce on it. Make small circles from marshmallows and spread them and chocolate chips on top of cake(or decorate with sth else). Decorate with strawberries or anything else.

Cookies with cinnamon and nuts



Ingredients:
250 gr butter
3 tbsp powdered sugar
1 cup walnut chunks
2 tsp vanilla (optional)
2-2.5 cups flour
2 tsp cinnamon
2 tbsp powdered sugar

Preparation:

Preheat oven to 165C. Make a dough from all the ingredients except for cinnamon and 2 tbsp powdered sugar. From that dough, take a pieces in size of a walnuts and make small balls from them. Bake them for ~40-45 minutes (until they start becoming brownish). mix cinnamon and 2 tbsp powdered sugar. when you take cookies from the oven, cover them with cinnamon mix while they are hot and serve.

"Mushroom" cookies


Ingredients:
250 gr butter
2 eggs
1 cup sugar icing
2.5 cups flour
1.6 cups starch
2 tsp vanilla(optional)
2 tsp baking powder
cacao or chocolate syrup

Preparation:
Preheat oven to 175C. Mix all the ingredients except for cacao. make a small balls from the dough. Cover bottom of a small lid from the bottle with cacao and press on the cookies. Bake cookies for 30 minutes and serve.

vegie pilaf with eggplants and mushrooms

This is my friend Kamer's recipe. This is probably the first time I enjoyed veggie plov :)

Ingredients:
1 small eggplant
200 gr mushrooms
1 cup rice

Preparation:
Wash rice and put it in hot salty water fro ~ 30 minutes, after that, remove it from water. Cut eggplants into small cubes(1x1x1cm) and fry them in pan. cut mushroom into the cubes too and fry them in the pot until they start to absorb the liquid(~ 10-15 minut). After that add eggplants and rice to the pot, add 1.5 cups hot water and salt, stir it, close the lid(Don't stir it again and don't open the lid. ) and put it on medium temperature. When water boils lower temperature on min and cook until its done.(~35 minutes)

Cake with Cinnamon and Walnuts


Ingredients:
3 eggs
3 cups flour
2.5 cups sugar
1 cup oil
1 cup milk
1 cup walnut chunks
2 carrots
1 tsp vanilla(optional)
2 tsp baking powder
1 tsp cinnamon

Preparation:
Preheat oven at 180C. Grate 2 carrots, place it in cooking pan mix it with 1 cup of sugar and cook. Place eggs and the rest of the sugar into a bowl and mix it till it bubbles. Add oil and milk while mixing. Add cinnamon, carrots, vanilla baking powder and walnuts. After mixing add flour and pour the mixture in the baking form. spread some walnut chunks on top and bake for ~60 minutes.

Easy Cake


Ingredients:

5 eggs
1 cup olive oil
1 cup sugar
2 tsp baking powder
3 tbsp milk
~2.5 cups flour

Preparation:

Preheat oven to 150C. Beat with mixer eggs and sugar, add the rest of the ingredients and bake it for 60-70 minutes.

This is the easiest recipe and it is really good. try it, u wouldn't regret. This recipe is for 6-7 people.

Ingredients:
3 cups shredded coconut
1 cup milk powder
3/4 cup sugar
150 ml cream

Preparation:
Mix all the ingredients, make small balls from the mixture and cover it with coconut. Place in refrigerator for couple of hours and it is ready to be served.

Pink cake


I did this for my friend's birthday, I was in a rush so I didn't have time to freeze it and all whipped cream melted by the time I arrived to the party. But it tasted really good and people didn't pay much attention to the cream anymore but don't do my mistakes and start making it yearly and let it stay in refrigerator for at least 2 hours! :)
Also there are three layers on the picture below but that's because I checked it too early and it didn't rise and I couldn't cut it in half(don't do my another mistake), so I made another cake, cut it in half and combined with the first one. Also in original recipe it is made with cacao instead of strawberry syrup. So you can make brown cake instead of the pink one :)

Ingredients:

Dough:
5 eggs
1 cup sugar
6 tbsp flour
2 tsp baking powder
2 tsp vanilla
30 ml water

Cream:
2 cups milk
1 cup sugar
3 tbsp flour
1 tbsp starch
2 tbsp strawberry syrup(or cacao)

1.5 cup whipped cream
3 tbsp strawberry syrup(optional)
2 tbsp raspberry jam(optional)(don't use thick jam)

Preparation:
  1. Pour milk, sugar, flour, starch and syrup in the pot and cook it on medium temperature until it bubbles. Leave it to cool while you are preparing cake.
  2. Preheat oven to 170C. Place eggs and sugar into a bowl and whip it with mixer until it bubbles. After that add slowly flour, vanilla and baking powder while mixing. Add water and mix again. Pour this in baking dish and bake for around 35 mins until it gets slightly dark golden color(on picture you see the bottom of the cake, top must be a little bit lighter). Stick a knife or toothpick in it to check if it is done. But don't remove it too early it will or it will not rise.
  3. After you remove it immediately cut it horizontally in two pieces. On lower half pour the cream, spread raspberry jam and cover it with the other half.
  4. Beat whipped cream and leave around 100 ml for decoration(optional). Add strawberry syrup to the rest and beat it again. Cover cake with whipped cream and decorate it as you like. I decorated it with white whipped cream, strawberry syrup and skittles, but I'm bad at decorating, so fantasize.

Cabbage salad

Very easy and delicious salad.
Ingredients:

half of medium cabbage
1 can of whole corn
2-3 slices of bread(or ready rusk)
salt
mayonnaise

Preparation:

Cut bread into small cubes and put them in preheated oven until they are crispy. Slice cabbage into very thin strips and place in the bowl. Add corn, bread, salt, mayonnaise and mix. Your salad is ready.

Olivye(russian salad)

This is the most famous Russian salad.

Ingredients:
2 medium potatoes
3 hard boiled eggs
150 gr salami(or sausage)
2 pickles
1 can of peas
green onion
salt
mayonnaise

Preparation:

Boil potatoes until they are really soft. Cut them into small cubes(~0.5x0.5x0.5cm) and place them in the bowl. Cut eggs, pickles and salami in the same way and put the in that bowl. Cut green onions into small circles and place them in the bowl. Add peas, salt and mayonnaise as you like, mix and serve.

2 layer spinach cake

This recipe is from Oktay Usta. I made it for my friend's good bye party. it is very yummy and looks impressive :)






Ingredients:

4 eggs
1.5 cups sugar
2 tsp baking powder
2 tsp vanilla
500 gr spinach
2.5 cups flour

cream:
3 cups milk
4 tbsp flour
1 egg yolk
1 cup sugar
1 tsp vanilla

1.5 cups whipped cream

Preparation:

  1. Place spinach into boiling water and boil spinach until it starts to change its color (10-15 mins). After that remove it from water and place directly into cold water. Remove all the water and make a puree from the spinach.
  2. Turn the oven on to 170C. In the mixing bowl place eggs and sugar and whip until it bubbles. After that mix it with spinach. Add slowly flour, vanilla and baking powder.
  3. divide the dough into 2 parts(if you have 2 round dishes of different size make 1 bigger than the other). place one part into the baking dish and cook it(~40-50 mins). after its ready cook the other dough.
  4. While cakes are in the oven start making cream. Pour milk in the pot, mix it with flour, sugar, vanilla and egg yolk. cook it on medium heat until it starts bubbling. let it cool.
  5. When cakes and cream are ready divide one cake into 2 halves. Pour a bit more than a half of the cream onto bottom part of the cake. cover it with the top half. As I don't have smaller baking dish I cut smaller circle from this cake (~4 less in diameter) and did the same procedure as with the first cake(i.e. cut in half and place cream in between).
  6. Prepare whipped cream. Put bigger cake on your serving dish and cover it with whipped cream. After that place a thin wooden stick in the middle(so smaller cake would sty in place). Put the smaller cake on tor of it and also cover it with whipped cream.
  7. From the cut out part of the smaller cake make small crumbs and place the on the cake as seeing on the picture. You can decorate it with kiwi if you would like.

Pilaf (plov)

Ingredients:
400 gr fat lamb
1 onion
3 carrots
1.5 cups rice
4-5 pieces of garlic
oil
salt
pepper

Preparation:
Cut meat into big cubes, pour 0.5 cup of oil in the pot, put in on the stove and preheat the stove to low temperature(3 on scale of 8). Add meat to the pot start cooking at low temperature until its almost done, add salt. Meanwhile, wash rice and put it into hot water, cut onions into semicircles and carrots into long thin sticks(don't cut them into cubes). After meat is almost done add onions to the meat and cook until they are done. After that add carrots and cook them too. When carrots are done remove rice from water, add it to the pot too. Pour hot water, so water is 2 cm above rice, add garlic, pepper and salt and oil if needed. When water starts to boil, lower temperature to minimum and cook until done(~30 minutes).

Chicken pie

This is my mom's recipe, it is a little bit complicated and it takes a while to cook. but it totally worth it. I haven't met a person who didn't like it yet(hope that you will not be that person ;)). So sacrifice your time and you wouldn't regret it. It is really good with goose or any other fat bird.
Note: when you cut pie, cut the upper part(lid) horizontally, so lower part will be like a plate, otherwise all sauce will spread on the plate.


Ingredients:


Dough:
1.5 cup water
3 tbsp plain yogurt(optional)
2 tbsp oil
2.5 tsp salt
5 1/3 cups flour
2.5 tsp yeast

Filling:
4 chicken drums(or any other parts with fat)
4 medium potatoes
4-5 bay leaves
2 medium onion
0.5 can of peas(200 ml)(optional)
salt
pepper

Preparation:
  1. Place all the dough ingredients in order they are listed into a bread maker and choose dough cycle.
  2. Meanwhile prepare filling. Fry onions in excess oil till they get golden color. Cut chicken into 4-5 cm pieces and put them in the bowl, put the bones too. Cut potatoes into semicircles (~1cm width), mix with chicken, add bay leaves, peas, onion with oil, salt, pepper and other spices if you like.
  3. Divide dough into 2 pieces(2/3 of dough for one piece and 1/3 for another) flatten dough till its 1 cm thick and put it into baking dish covering all the wall of the dish, so ~ 2-3 cm of sough come out of the dish. Place filling and 2 tbsp of water inside, open up another dough and cover the dish. Stick ends of 2 pastries together, otherwise it will leak.
  4. Put in in the oven preheated at 220C and bake for 15 minutes. After that decrease temperature to 180C and bake for ~ 1.5 hours. make sure that the top doesn't burn but also do not remove it too early because potatoes will be undercooked. The yummiest part is the bread underneath :)
PS: if all the filling didn't fit into the pastry, place leftovers in refrigerator and when you'll be done with chicken pie mix it with mayonnaise(yes, mayonnaise ;)) and bake it in oven for 30 mins at 180C. Or bake it right away and you'll have 2 different meals :)

Cacao cinnamon cake

For cinnamon lovers! I ended up baking it for my friends who, as it turns out, don't like cinnamon. so check your audience before cooking :) you can decrease amount of cinnamon if that is too much for you

Ingredients:
3 cups flour
5 eggs
2 cups sugar
2 butter sticks
3 tablespoons cacao
2 tablespoons cinnamon
1 cup milk
2 teaspoons baking powder

Preparation:

Preheat oven to 150C.
Melt butter in a small pan, add cacao and cinnamon to the butter after melting, mix well and leave to cool.
Place eggs and sugar to the mixing bowl and mix it with mixer for 3-4 minutes until it becomes whitish. Slowly add butter mixture while mixing. After that slowly add milk, flour and then baking powder. Don't add baking powder directly to the mixture. add it with a small amount of flour. mix for 2 more minutes.
Pour the mixture into the baking form and put in the preheated oven for about 80-90 minutes.

Savory pastry




I got this recipe from my friend, Kezban. It is one of the best pastries I've ever tried. and it is really easy to make.

Ingredients:
2 cups milk
2 eggs
1 stick butter
0.5 cup oil
3 tablespoons sugar
1 teaspoon salt
~5 cups all-purpose flour
1 tablespoon yeast

Optional:
if you want to make it with filling use some mozzarella cheese

Preparation:
Melt butter and warm up milk a little. if you have bread maker, add all the ingredients in the order they are listed to the bread maker's pan. You might need extra or less flour, so after adding 4.5 cups of flour add the rest carefully. dough should be soft. make sure that when dough is kneading some of it doesn't stick to the pan. or just knead it yourself and leave it in warm place to rise. When dough is ready, turn on the oven on 200C. Place wax paper on baking sheet.
Oil your hands so dough doesn't stick, get a dough in a size of a palm give it round shape. If you decided to make it with filling, press in the centre of the dough, put the filling in the there and close it up. put ready pastries on the sheet, brush them with egg yolk.Baking is around 20-25 minutes, so check constantly.When the top is golden brown, pastries are ready.
